Storage and Shelf Life

How should I store my cheese?

Once your cheeses arrive, we recommend transferring them as soon as you can to the refrigerator. All cheeses must be kept refrigerated and should only be removed from the refrigerator immediately before serving. We recommend consuming the cheeses within 7 days of opening. Here are some tips on how to best store the cheese after they have been opened:

Bries: The bries need to have air flow, so we do not recommend wrapping brie tightly in plastic wrap, as this can cause bad mold to develop. Instead, we recommend loosely wrapping pieces in cheese paper or parchment paper, and storing in the crisper. Make sure cut surfaces are protected from drying out by applying a piece of wax paper to the exposed area before storing.

The brie is made with living cultures and sometimes mold spores will bloom and appear on the rind and inside the cheese — like a layer of fuzz. This growth is normal and is fine to consume.

Fromages and Chèvres: Securely wrap in cheese paper and seal opening with tape or a sticker. If wrapping with waxed paper, follow with a wrap of plastic.

Firm Cheeses: Wrap in cheese or wax paper and store in a partially opened plastic zip bag.

How long do the cheeses last?

All cheeses should have a white label attached to their packaging with the lot number and best by date printed on them.

Here are the guaranteed refrigerator shelf lives for each of our cheeses:
Bries: 30 days
Fromages: 30 days
Chèvres: 18 days
Firm Cheeses: 3 months (Pepper Jack is 1 month)
Dips/Spreads: 14 days

Can the cheese be frozen?

All chèvres and fromages can be frozen for up to 6 months. Any of our dips and spreads can also be frozen — just be sure to stir once thawed. Please defrost in the refrigerator and consume within the number of days allotted prior to freezing.

We do not recommend freezing any brie or firm cheese as it may affect the texture.

Cheese Info

Do the cheeses contain dairy, gluten, soy, sesame, or tree nuts?

All of our cheeses are 100% vegan and dairy-free. Most of our cheeses do not contain gluten ingredients. Some cheeses do contain soy and sesame. Most contain tree nuts. Visit the Meet the Cheeses page for the full list of ingredients and allergens as well as a nutrition panel for each cheese. If you have additional questions, please reach out to cheeseclub@rebelcheese.com.

Please note that cheeses are made and stored in a kitchen that contains and processes gluten, soy, tree nuts, and sesame products.

Are your cheeses Kosher certified?

Currently, our products are not Kosher certified; however, this is something we are actively pursuing in 2024. All of our cheeses are made in our own production facility which only uses vegan and dairy-free ingredients. I placed my Fromagier order at the end of the month - will I receive this month's lineup or next month's lineup?

You will receive this month's lineup. Orders are based on purchase date, not shipment date.

Will I receive new cheeses every month in my Fromagier box?

We offer a variety of beloved, well-known favorites that repeat in our Fromagier box, along with limited-time, limited-production, and new innovation cheeses. This variety allows our subscribers to savor the classics while trying exclusive new and small batch offerings.

Shipping

I just placed an order. When should I expect delivery?

Any order placed before 11:59 PM CST on Sunday should be shipped the next week using FedEx 1-2 day shipping to arrive between Tuesday and Friday. We ship orders early in the week to avoid potential shipping delays into the weekend. When your order ships you should get a notification from UPS with the tracking information. You can read more about our shipping schedule here

If you have questions about your order, you can send an email to cheeseclub@rebelcheese.com or call us at (432) 243-3643. We will do our best to accommodate.

Our customer service hours are Monday- Friday 8 AM - 4 PM Central Time. For all emails, please allow a minimum of 48 hours (Monday - Friday) for a response. All emails sent on weekends or after 4 PM Central Time on Fridays will be responded to on Monday as soon as we can.

*Please note that we reserve the right to alter shipping days in the event that they fall on a holiday. Any alterations will be communicated in advance.

I'm tracking my order and it's delayed. Will the cheese still be okay?

More often than not, a single delay does not mean that your package will arrive warm. Please wait for its arrival and reach out to cheeseclub@rebelcheese.com if there are any issues with your cheese once it does arrive. Please include pictures if possible, as this will help expedite the resolution process.

My order has been delayed for days. Will it be arriving soon?

If your order is still in transit days after it was due to arrive, it has likely been lost. Please reach out to cheeseclub@rebelcheese.com so that we can resolve the issue as soon as possible.

Do you ship to Alaska, Hawaii, Canada, or outside of the US?

As of September 2024, we do ship to Alaska, Hawaii, and Canada.

Do you ship to U.S. Military Post Offices (APO, FPO, DPO, etc.)?

Since we use FedEx, we can not ship to Army Post Office (APO) or FPO addresses. The U.S. Postal Service (USPS) is the only delivery service that can send packages to APO, FPO or DPO locations. Even if FedEx and UPS may ship to the country where the service member is stationed, they can not deliver to APO addresses for security reasons.

Cost & Packaging

Why does your cheese cost more than dairy or other vegan cheeses?

We focus on creating artisan, plant-based cheeses using traditional dairy methods with ingredients that we can stand behind. This means purchasing organic, Fair Trade ingredients whenever possible and using recognizable ingredients in all of our cheeses.

Many of our cheeses are hand crafted and some take weeks to properly culture and age. We truly put love into every batch!

We also aim to use recyclable or compostable packaging whenever possible to minimize our environmental impact.

We are proud of these values but recognize that there is a cost that comes with them. We hope that as we continue to grow, we are able to improve efficiencies and source a larger amount of materials at a time which will offer us greater savings that we can extend to our customers.

How do I dispose of the packaging?

We localize the majority of our supply chain by actively sourcing many of our shipping materials from within greater Texas. Please note, as we are testing out new packaging options, your box will only contain some of the below items.

Corrugated Box & Water-Activated Paper Tape: Curbside recyclable.

Brown bag & liner insulation: Curbside recyclable.

Insulated Box Liners: Renewliner insulated box liners are made from recycled water bottles. All ink is water-based. Contains no adhesives, PVC, papers, or containments.

Ice Packs: Enviro Ice is safe for pouring down a household drain or flushing in a toilet - it can also be diluted with water and used to feed your plants!  For the plastic pouch, rinse it and recycle anywhere #4 low density polyethylene plastic is accepted (please check if this is accepted curbside in your neighborhood).

Cheese Bags: Landfill trash (due to the barrier protection required to protect the quality of the cheese, this is not recyclable. We use the thinnest amount of plastic possible through our distributor to minimize waste).

Cheese Tubs: the tubs and lids are designated as #5 polypropylene (please check if this is accepted curbside in your neighborhood). The seal should be disposed of in your landfill trash bin.
