• Truffle Brie. Our award-winning Truffle Brie has earned recognition from the New York Times and captivated the Sharks on Shark Tank. This one-of-a-kind plant-based gourmet cheese ages for two weeks in our cheese cave, where it receives daily hand-tending. The luxurious truffle flavors permeate its creamy, mild center, while the carefully cultivated bloomy rind—grown in our cheese cave—adds a delightful hint of complexity.
• Tomato Herb Fromage. Our beloved "pizza cheese" has everyone talking! This unique fromage features a Mediterranean herb coating and a delightful surprise—a sun-dried tomato center. When we make this cheese, the entire building fills with the amazing aroma of Mediterranean seasonings. 
• Smoked Cheddar. This firm cheese is cold-smoked with mesquite wood chips for a bold, distinctive flavor. Perfect for slicing, snacking, or grating, it elevates sandwiches, burgers, wraps, and salads, or pairs beautifully with sweet apples. 
  
• Honee Pistachio Chèvre. A soft cheese featuring a tangy base complemented by a sweet-and-salty coating, creating a perfectly balanced flavor profile. This versatile cheese shines on its own or when served on bruschetta with balsamic vinegar and olive oil.
• Gruyere. A young, firm cheese with a mildly sharp and nutty flavor profile, enhanced by a subtle touch of saltiness. Our cheesemakers have refined this classic over the years, carefully enhancing its distinctive characteristics based on valuable customer feedback.
• Pimento Cheese. (Spicy). Our Pimento Cheese was a hit on Shark Tank and is one of our best-selling items at our Austin bistro location! This crowd favorite is perfect for spreading and dipping. The jalapeno peppers give it a spicy Texas kick. As always, this amazing cheese is 100% vegan, dairy-free, and lactose-free.
