Serve it with a warm baguette, rosemary crackers, and roasted mushrooms or caramelized shallots. Truffle Royale Burger with Truffle Brie

Think of this as... a burger in a tuxedo. Pure elegance. When you combine Rebel’s decadent, bloomy Truffle Brie, sautéed mushrooms, and a truffle aioli, you’ll get just that. Serving it on ciabatta elevates the sophistication. This classy burger is the perfect move for savoring decadent moments this summer. 

Ingredients: 

  • Ciabatta
  • Burger of choice (we use Impossible here)
  • Heirloom tomato (lightly salted)
  • Sautéed mushrooms and onions
  • Fresh rosemary 
  • Arugula
  • Truffle aioli (vegan mayo + truffle oil)
  • Rebel Cheese Truffle Brie

Directions:

Grill your burger however you prefer. Layer your tomato, burger, and slices of Truffle Brie. Top with mushrooms and onions, then arugula, and slather the ciabatta top bun with aioli. Enjoy! 

The Perfect Appetizer - Mini Brie en Croute

If you’re looking to impress with appetizers or for a holiday gathering, our mini Truffle Brie en Croute is the perfect savory bite. Please note, we’ve found baking our brie is more enjoyable in this form (slices) than baking a full wheel! 

Ingredients:

  • Filo dough or vegan puff pastry 
  • Cremini or Button Mushrooms
  • Shallots
  • Rosemary 
  • Olive oil 
  • Rebel Truffle Brie
  • Fig Jam
  • Salt, pepper, garlic powder

Instructions: 

Thinly slice your shallot and finely chop your mushrooms.

Sauté shallots, mushrooms, and fresh rosemary in olive oil. Season with salt, pepper, and garlic powder, and any herbs to your liking. 

Thaw and cut 3x3 squares of your filo dough or puff pastry. Reserve half of them as toppers for your pastries.

Cut your Truffle Brie into thin slices, about ¾ inch thick

Spoon a small amount of the mushroom mixture into each square.

Add a Truffle Brie slice on top.

Take the reserved squares of pastry and top each one, crimp the sides with a fork, and cut a small X in the top

Bake based on the pastry directions

Serve with fig jam for dipping! 

Shelf-life & Storage

All cheeses should have a white label attached to their packaging with the lot number and best by date printed on them. 

DO NOT FREEZE.

Once your cheeses arrive, we recommend transferring them to the refrigerator as soon as you can. All cheeses must be kept refrigerated and should only be removed from the refrigerator immediately before serving. We recommend consuming the cheeses within 7 days of opening. Here are some tips on how to best store the cheese after they have been opened: 

Bries: Brie needs airflow, so we do not recommend tightly wrapping it in plastic wrap, as this can cause bad mold to develop. Instead, we recommend loosely wrapping pieces in cheese paper or parchment paper and storing them in the crisper. Before storing, apply a piece of wax paper to the exposed area to protect cut surfaces from drying out.

Our cave-aged Bries are made with living cultures, and sometimes mold spores bloom and appear on the rind and inside the cheese, like a layer of white fuzz. This growth is normal and is fine to consume.

Are Rebel Cheese's vegan cheeses gluten-free?

Yes. All of our vegan cheeses are gluten-free. Every wheel and wedge we handcraft in our Austin kitchen is made from organic cashews with no gluten-containing ingredients.

Please note that some partner products we carry, such as crackers and salami, do contain gluten. You can shop our full selection of gluten-free products here. Products that do not contain gluten can be found here.

Can Rebel Cheese's dairy-free cheeses be frozen?

Yes. All of our plant-based chèvres and fromages can be frozen for up to 6 months. Our dips and spreads can also be frozen. Simply thaw in the refrigerator and stir once defrosted before serving. Consume within the number of days indicated on the packaging after thawing.

For best results, enjoy our aged and firm cheeses, including our Cave-Aged Classic Brie and Cave-Aged Truffle Brie, fresh from the refrigerator. Freezing may alter their texture and is not recommended for those styles.

How should I store my Rebel Cheese vegan cheeses?

When your order arrives, transfer your cheeses to the refrigerator right away to preserve freshness and flavor. Keep all cheeses refrigerated and remove them just before serving. For best quality, consume within 7 days of opening.

Aged Bries (Cave-Aged Classic Brie, Cave-Aged Truffle Brie): Brie needs airflow. Loosely wrap in cheese paper or parchment paper and store in the crisper. Apply a piece of wax paper to any cut surfaces to prevent them from drying out. Avoid tight plastic wrap, which can promote unwanted mold growth.

A note on brie rinds: Our cave-aged bries are made with living cultures. You may notice small mold spores or a light fuzz on the rind or inside the cheese. This is completely normal, a sign of authentic cave-aged craft, and safe to consume.

Fromages and Chevres: Securely wrap in cheese paper and seal the opening with tape or a sticker. If using wax paper, follow with a layer of plastic wrap.

Firm Cheeses: Wrap in cheese or wax paper and store in a partially opened plastic zip bag.

Dips and Spreads: We recommend keeping dips and spreads in their original containers.
