How to care for your cheese

How should I store my cheese?

Once your cheeses arrive, we recommend transferring them to the refrigerator as soon as you can. All cheeses must be kept refrigerated and should only be removed from the refrigerator immediately before serving. We recommend consuming the cheeses within 7 days of opening. Here are some tips on how to best store the cheese after they have been opened: 

Bries: Brie needs airflow, so we do not recommend tightly wrapping it in plastic wrap, as this can cause bad mold to develop. Instead, we recommend loosely wrapping pieces in cheese paper or parchment paper and storing them in the crisper. Before storing, apply a piece of wax paper to the exposed area to protect cut surfaces from drying out.

Our cave-aged Bries are made with living cultures, and sometimes mold spores bloom and appear on the rind and inside the cheese, like a layer of fuzz. This growth is normal and is fine to consume.

Fromages and Chèvres: Securely wrap in cheese paper and seal the opening with tape or a sticker. If wrapping with waxed paper, follow with a plastic wrap.

Firm Cheeses: Wrap in cheese or wax paper and store in a partially opened plastic zip bag.

How long do the cheeses last?

All cheeses should have a white label attached to their packaging with the lot number and best by date printed on them.

Here are the guaranteed refrigerator shelf lives for each of our cheeses:
Bries: 30 days
Fromages: 30 days
Chèvres: 18 days
Firm Cheeses: 3 months (Pepper Jack is 1 month)
Dips/Spreads: 14 days

Can the cheese be frozen?

All chèvres and fromages can be frozen for up to 6 months. Any of our dips and spreads can also be frozen — just be sure to stir once thawed. Please defrost in the refrigerator and consume within the number of days allotted prior to freezing.

We do not recommend freezing any brie or firm cheese as it may affect the texture.

Shipping & delivery

We carefully prepare and ship all orders within 5 to 10 business days, often sooner.

All orders are shipped via UPS 2nd Day Air to ensure freshness and timely delivery.

Each shipment is packed in a custom insulated box with ice packs and liners designed to maintain a safe temperature of 40°F or below for up to 48 hours during transit.

Once your order ships, you’ll receive a confirmation email with tracking information.

If your order is delayed or arrives damaged, please contact us at cheeseclub@rebelcheese.com within 48 hours of delivery so we can make it right.

During peak seasons or holidays, shipping timelines may be extended. Please place your order early to ensure timely delivery.
