Truffle Chèvre Mac and Cheese

Featuring: Rebel Cheese Truffle Chèvre

Ingredients:

16oz (453g) Macaroni Pasta
8oz (227g) Vegan Truffle Cheese (or sub Vegan Cream Cheese)
2 cups (473ml) Unsweetened Plant Milk at room temp or slightly warm
1 1/2 cups (354ml) reserved Pasta Water
3 Tbsp (30g) Flour
3 Tbsp (42g) Vegan Butter
1 Tbsp (15ml) Black or White Truffle Oil plus more for serving
Salt & Pepper tot aste

Truffle Bread Crumbs
2/3 cup (65g) Panko Bread Crumbs
2 1/2 tsp (12ml) Black or White Truffle Oil
Salt & Pepper to taste 

Directions:

1.Make the toasted truffle bread crumbs by mixing the truffle oil into the bread crumbs along with salt & pepper to taste. Heat a dry frying pan on medium low heat and add in the crumbs in one layer. Stir the crumbs occasionally until nicely browned, about 7-10 minutes. Set aside.

2.Cook the pasta according to package directions. Make sure to reserve 1 1/2 cups of the pasta water.

3.While the pasta is cooking, melt the vegan butter in a large pot on medium heat. Add in the flour and mix until well combined and a paste forms. Continue stirring and cook for 2 minutes.

4.Add in the warmed plant milk and whisk until combined. Allow the mixture to thicken while stirring occasionally. About 10 minutes.

5.Add in the vegan truffle chèvre or cream cheese and mix together until completely melted. Add a little pasta water at a time if needed to loosen the sauce to desired consisitency.

6. Add in the truffle oil and season with salt & pepper. Mix well.

7. Add in the cooked pasta and mix until well coated. Allow it to heat through then serve immediately with toasted truffle bread crumbs and a drizzle of truffle oil.
