Blackberry Balsamic and Brie Grilled Cheese

We all know Rebel Cheese is one of my favorite vegan cheese brands so I’m once again using them for this spectacular brie. Surprisingly enough, I was never a fan of the taste of brie, but I really enjoy the flavor and texture of the Rebel Cheese one AND it’s vegan so, win-win."
Ingredients:
- Blackberry jam
- Sourdough bread, sliced
- Vegan Brie (my favorite is from @rebel.cheese )
- Fresh thyme, finely chopped
- Vegan butter, softened to room temperature or slightly melted
- Balsamic glaze, optional
Instructions:
- Spread a thin layer of blackberry jam one each slice of sourdough bread
- Slice the brie cheese into thick slices and place along one side of the sliced bread, sprinkling with fresh thyme, and drizzling with balsamic glaze, then sandwiching with the other slice of bread
- Add a pinch of fresh thyme with vegan butter and spread on the outside of one of the slices
- Heat a skillet on medium heat and place the sandwich down, butter side down in the pan. Spread butter on the top side of the bread.
- Let the bread slowly grill until the brie begins to soften and the bread is golden brown and then carefully flip. Continue to fry the sandwich until the bottom piece of bread is golden brown.
- Transfer the grilled sandwich to a cutting board. Let cool for a couple of minutes then cut in half with a sharp knife.
