Summer Cheese Board: Arrange the Brie, Gruyere, and Colby Jack on a wood board with sliced stone fruit, honeycomb, and rosemary crackers. The Strawberry Basil Fromage goes in a small ramekin at the center.
Elevated Toast: Pile the Bacon Scallion Spread on thick sourdough with heirloom tomatoes and flaky salt. Best eaten outside.

Christmas in Seoul!

I used to normally buy my onesie twosie Rebel cheeses from places like Besties, ID-Eclair and Gelsons but since I started living overseas half the year, I have been needing to stock up. I purchased the Spring Picnic and Greatest Hits packages and froze the fromages and used them as additional ice blocks to transport all of cheeses! This is my first time having bought so much at once but it was like Christmas morning as I unpacked everything! I hope that they all keep fresh for a while. I am looking to host multiple vegan wine & cheese nights with my stock and introduce Seoul to my favorite cheeses!! (Needless to say, I love all Rebel products and think they are all absolutely delicious)

Possibly the best yet. Loved the strawberry basil, the scallion cream cheese (please don't call it bacon, we're vegan for the animals - how about savory scallion maple?), and the oldies but goodies like brie and balsamic fig - awesome.

I bought shipping insurance thru Shop, but The cheese arrived with all of the ice packs melted and the temperature of the cheeses between 74-77. The bries snd chevres were mush to the touch and the cream cheese showed separation with oil on the bottom.

Great assortment

Several of the cheeses I have tried before.so I know they are winners. The brie and truffle chevre are both great soft cheeses. They paired perfectly with some Mary's Gone Crackers crackers.

A wonderful assortment.

The assortment was fantastic. Some harder cheeses, some softer and more subtle, and a nice "sweet" cheese as well. My only issue is with the triple peppercorn. I appreciate spicy flavors as much as anybody, but in this case it was overpowering. Even in small portions it was hard for the family to enjoy. The cheese flavor was good, but a bit lost in the intense peppery-ness. We ended up mixing it in with a dish, which came out fantastic.

Yes. All of our plant-based chèvres and fromages can be frozen for up to 6 months. Our dips and spreads can also be frozen. Simply thaw in the refrigerator and stir once defrosted before serving. Consume within the number of days indicated on the packaging after thawing.

For best results, enjoy our aged and firm cheeses, including our Cave-Aged Classic Brie and Cave-Aged Truffle Brie, fresh from the refrigerator. Freezing may alter their texture and is not recommended for those styles.

When your order arrives, transfer your cheeses to the refrigerator right away to preserve freshness and flavor. Keep all cheeses refrigerated and remove them just before serving. For best quality, consume within 7 days of opening.

Aged Bries (Cave-Aged Classic Brie, Cave-Aged Truffle Brie): Brie needs airflow. Loosely wrap in cheese paper or parchment paper and store in the crisper. Apply a piece of wax paper to any cut surfaces to prevent them from drying out. Avoid tight plastic wrap, which can promote unwanted mold growth.

A note on brie rinds: Our cave-aged bries are made with living cultures. You may notice small mold spores or a light fuzz on the rind or inside the cheese. This is completely normal, a sign of authentic cave-aged craft, and safe to consume.

Fromages and Chevres: Securely wrap in cheese paper and seal the opening with tape or a sticker. If using wax paper, follow with a layer of plastic wrap.

Firm Cheeses: Wrap in cheese or wax paper and store in a partially opened plastic zip bag.

Dips and Spreads: We recommend keeping dips and spreads in their original containers.
