Cheesy Truffle Mashed Potatoes

This dish is comfort food with a cashmere touch, featuring our irresistibly smooth and luxurious Truffle Chèvre! It's the kind of side dish that steals the show.

We love using red-skinned potatoes and oven-roasting them for a more rustic look and beautiful color. Roasted garlic brings sweetness a bit of sweetness, fresh herbs bring depth, and the silky truffle chèvre? It brings it all together!

Ingredients

  • 2 lbs of small red-skinned potatoes (or any potatoes of your choice)
  • Salt & pepper
  • 1 head of garlic
  • ⅓ cup unsweetened plant milk
  • Olive oil
  • 2tbsp vegan butter
  • Fresh sage
  • 1 tbsp fresh thyme
  • 1 tbsp rosemary
  • Truffle oil (optional)
  • ½ log (4 oz) Rebel Cheese Truffle Chèvre

Directions

  1. Oven-roast your potatoes with olive oil, salt, pepper, and a head of garlic at 400°F in a baking dish covered with tin foil. Remove when potatoes become soft and the garlic is soft. Roast time will vary depending on potato size.
  2. In a small saucepan, heat up the butter with finely chopped herbs and salt and pepper until fragrant. Add in the Truffle Chèvre and plant milk to thin and melt the cheese. Heating the Chèvre and milk together will help the potatoes remain soft and fluffy.
  3. Mash your potatoes and squeeze out the roasted garlic directly into the potato bowl. The bits of garlic will incorporate as you mix it all together, slowly adding in the cheese, herbs, and milk mixture to help the mashed potatoes come together. Add more plant milk as needed for desired consistency.
  4. Drizzle the top with some more Truffle Chèvre or truffle oil if you love truffle as much as we do. Enjoy!
