A galette is the kind of dessert that doesn’t ask for perfection – rustic folds, bubbling fruit, a golden crust kissed with hot honee. and at the heart of it all? Our Cave-Aged Brie, bringing depth of flavor to every bite.
This dish is a holiday showstopper without the stress. It’s sweet, savory, just a little spicy, and exactly what your Thanksgiving table has been missing.
Ingredients
- 2 ripe pears
- 12–15 fresh figs
- Hot honee (to drizzle + brush)
- Puff pastry or pie dough
- 2–3 tsp coconut sugar
- Fresh sage leaves
- 2 tsp cornstarch
- Rebel Cave-Aged Brie
- Rebel Balsamic Fig Fromage (optional)
- Ice cream or whipped cream (for serving)
Directions
- Thinly slice pears, figs and Brie.
- Roll out pastry dough on parchment paper. Drizzle hot honee.
- Arrange fruit in a circular pattern, or simply place in the center, keeping inches away from the edge. Pro tip: toss fruit in cornstarch to help thicken juices.
- Disperse the Brie around and between fruit slices. If also using Balsamic Fig Fromage, add slices between fruit slices, letting both cheeses have fruit between them.
- Fold up the sides of dough and brush the crust with more hot honee.
- Sprinkle coconut sugar on top of the fruit.
- Bake at 375°F for 35 minutes.
- Allow to set before serving. Serve with whipped cream, custard or ice cream.

- Garnish with fresh sage leaves after baking

- Dust lightly with powdered sugar before slicing
