Bacon, Brie, & Me: Rebel’s Most-Loved Bistro Sandwich (Now in Your Kitchen!)

Ever since we opened our Austin Bistro in 2019, the Bacon, Brie & Me has been the crown jewel of our menu. 🥪 Smoky, creamy, sweet, peppery — this sandwich has a following all its own! Customers still write to us years after visiting us, telling us they dream about this sandwich... 💌
And now, you can finally make it at home!
At the bistro, we craft this beauty with our house-made Rebel Bacon, but for this at-home version we’re using MyBacon from MyForest Foods — smoky, crisp, and 100% vegan. If you don't have it on hand, you can use your favorite plant-based bacon for this recipe.

Ingredients (Makes 3 sandwiches)
- 1 loaf fresh baguette, cut in thirds and halved lengthwise
- 1 wheel Rebel Cheese Brie (5.6 oz)
- 9–12 slices vegan bacon (MyBacon from MyForest Foods works beautifully)
- 3 small handfuls fresh arugula (must-have, not optional)
- 1 medium-sized onion, caramelized
- Generous spread of blueberry jam or fig jam
- Vegan butter or olive oil for toasting
Instructions

Prep the Bread
Slice your baguette into 3 portions and then cut each in half lengthwise. Then, lightly grill the inside surfaces of the bread with some butter. -
Cook the Bacon
In a skillet over medium heat, cook the vegan bacon until golden and crisp, about 2–3 minutes per side. Set aside. -
Spread the Brie
On the bottom half of each sandwich, generously spread Rebel Brie with the rind on — don’t skip it, it’s the best part and where so much of the flavor lives! -
Layer the Savory
Top the brie with a generous spoonful of caramelized onions, followed by crisp vegan bacon. -
Spread the Jam
On the top half of each sandwich, spread blueberry or fig jam generously. -
Add the Arugula
Pro tip: Layer fresh arugula on top of the jam, not under the warm ingredients — this keeps it crisp and bright, not wilted. -
Assemble & Serve
Bring the two halves together and enjoy immediately, while the brie is creamy and the bread is fresh.
