What Makes Them Special
- Real French technique: Almond flour, aquafaba, and powdered sugar whipped into a true meringue, piped, rested, and baked. No shortcuts.
- The shell breaks the way it should: Thin crust, ruffled "foot," tender chew. Most vegan macarons collapse or go gummy. These do not.

Tasting Notes
The shell hits first - a clean almond snap that gives way to a soft, chewy interior. Then the filling: silky ganache or buttery jam depending on the flavor, calibrated so the sweetness lifts the almond instead of burying it. Each is about two bites, which is the right number for a macaron. Best at room temperature, fifteen minutes out of the fridge, with coffee, tea, sparkling wine, or, honestly, anything.

How to Enjoy
Refrigerate when your box arrives. About fifteen minutes before you serve, take what you want out of the fridge and let it come to room temperature - this is when the shell relaxes, and the filling softens, and this is when macarons are at their peak. Eat within seven days, or freeze for up to one month. To enjoy from frozen, thaw in the fridge overnight, then bring to room temp.
