Blackberry Balsamic and Brie Grilled Cheese

Remember those ooey-gooey grilled cheeses you lived for as a kid? This is the grown-up version, and honestly, it might be even better. Sarah (@sunkissed_sarah on Instagram) created this beauty for us using our vegan Brie, and we're obsessed. Tangy blackberry jam, creamy melted Brie, a hint of fresh thyme, and a drizzle of balsamic glaze, all pressed between two slices of buttery, golden sourdough. It's sweet, savory, and completely irresistible. In Sarah's words: "I like to think that this is the more 'adult' version of a childhood favorite! I was never a fan of the taste of brie, but I really enjoy the flavor and texture of the Rebel Cheese one AND it's vegan — so, win-win."

Method

  1. Spread a thin layer of blackberry jam one each slice of sourdough bread
  2. Slice the brie cheese into thick slices and place along one side of the sliced bread, sprinkling with fresh thyme, and drizzling with balsamic glaze, then sandwiching with the other slice of bread. With 1 wheel of Brie, you should be able to make at least 2 sandwiches.
  3. Add a pinch of fresh thyme with vegan butter and spread on the outside of one of the slices
  4. Heat a skillet on medium heat and place the sandwich down, butter side down in the pan. Spread butter on the top side of the bread.
  5. Let the bread slowly grill until the brie begins to soften and the bread is golden brown and then carefully flip. Continue to fry the sandwich until the bottom piece of bread is golden brown.
  6. Transfer the grilled sandwich to a cutting board. Let cool for a couple of minutes then cut in half with a sharp knife.
  7. Enjoy!
