1. Caramelize the Onions
Slice onions thin. Cook over low heat with a little oil and a pinch of salt, stirring occasionally, until they're deep golden and jammy, about 25–30 minutes.
Don't rush this part.
2. Grill the Patties
Cook your plant-based patties on the grill. When nearly done, layer Mozzarella slices on top and close the grill lid for 1–2 minutes until the cheese is fully melted.
3. Prep Your Buns
Spread dijon mustard on the bottom bun. Smear Bacon Scallion Spread generously on the top bun, don't be shy.
4. Build
Bottom bun → patty with melted mozzarella → heirloom tomato → butter lettuce → caramelized onions → pickles → top bun. Press gently and serve immediately.
